Whoopie Pies
Sorry there's no picture yet, but I had a request for the recipe. I guess that means it's time to make them again and take a picture! Edited 2/16/2010 - I still haven't made these cookies recently, but Megan did, so now there's a picture - and a name change!
Whoopie Pies (aka Homey-O's)
2 cups flour
1 cup sugar
1 tsp baking soda
¼ tsp salt
1/3 cup cocoa powder
1 egg
¾ cup milk
1/3 cup oil
1 tsp vanilla
1 cup butter or margarine
2 cups powdered sugar
6 heaping Tbls marshmallow fluff
2 tsp vanilla
Combine flour, sugar, soda, salt and cocoa. Stir in egg, milk, oil and 1 tsp vanilla. Drop by spoonfuls onto well greased cookie sheets. Bake at 350° for 9 minutes. Cool. Combine butter, powdered sugar, marshmallow fluff and 2 tsp vanilla for filling between two cookies.

Still haven't made the cookies, but we did try this Whoopie Pie Cake and it was delicious!

We're making the cookies today in honor of Brad's birthday! Last week I saw a recipe for an "adult" version of Whoopie Pies. It included stout beer in the batter, which isn't a variation we're interested in trying; however, it also suggested adding cream cheese to the filling to mitigate the cloyingly sweet taste of the original recipe. It's a great suggestion, but their version just didn't seem like it would work for us, so I did some searching and found another here.
Marshmallow Cream Cheese Frosting
4 ounces cream cheese, softened
1/4 cup butter, softened
1/2 cup marshmallow creme
1 tablespoon milk
1 teaspoon vanilla
1 1/2 to 2 cups powdered sugar
Cream butter and cream cheese, then mix in marshmallow creme, along with milk and vanilla. Stir in powdered sugar until desired consistency.

That recipe didn't turn out the way I expected, and in trying to improve it, I used the entire 7-ounce jar of marshmallow creme (instead of just 1/2 cup) and added another brick of cream cheese (so 8 ounces more). It was still too sweet, maybe because I also had to add more powdered sugar to thicken it up a bit. I still used it to make the cookies and no one else complained at all, and it even made a great frosting for cinnamon rolls. However, I'm still on the lookout for a better Whoopie Pie filling.

These are very popular in Maine and most every little Mom and Pop store has them for sale. My Mom and I used to make them quite a bit. We even made Molasses ones with Ginger filling once! It sounded ok, but they tasted awful, lol. I am going to have to make some with the girls!
