Fajitas


Do you ever find that you get creative as the end of the month nears and the grocery budget money has disappeared? The menu said "chicken fajitas" and we were out of tortillas, so that's why I dusted off my old recipe, and made my own. Fortunately, everything else was in the freezer. 

This is another "no-recipe" recipe. We just sauté chopped peppers, onions, garlic and either chicken or beef strips in a little olive oil. Then drizzle with lime juice and toss in a little salsa if desired. When everything's cooked, place a spoonful on a tortilla, fold over, and dollop with sour cream and more salsa. That's it!

Updated October 2023 with a marinade for the beef. Combine about 2 tablespoons olive oil, 2 tablespoons orange juice, 1 tablespoon lime juice with garlic, chili powder, cumin, oregano, parsley and paprika for seasonings. Marinate one pound of beef in the mixture for a few hours, then drain, grill, slice, and mix with cooked peppers and onions. Serve with tortillas, sour cream, salsa and avocado, or whatever else you want!

  1. One of these days I'll have to try making flour tortillas again. My first attempt wasn't very successful!

    I make chicken fajitas in a similar way. I also add cumin and/or chili powder, and sometimes Goya Salsita. I think the Salsita is chipotle, so it adds a nice smokiness.
