Easy Banana Bread


I've never been able to determine if the fact that this recipe has no butter or shortening was intentional or just a typographical error, but it works, so I keep making it. (The original recipe was submitted to the Hollister Relief Society Cookbook by Zola Tayler.)

Easy Banana Bread
 
3 ripe bananas 
3/4 cup sugar 
2 eggs 
2 cups flour 
1 teaspoon baking soda 
1 teaspoon salt 
1/2 cup chopped nuts

 
Crush bananas; add eggs and beat until light. Then add remaining ingredients and mix well.
 
Pour into 3 mini loaf pans (or one large one).
 
Bake at 325° for 35 minutes (or one hour for the large size).
 
Remove from pans to cool.
 
Slice and serve.
