Magic Cake


Magic Cake

4 eggs, separated
1/4 teaspoon cream of tartar
2/3 sugar
1 teaspoon vanilla
1/2 cup butter, melted 
3/4 cup flour
2 cups whole milk, lukewarm
powdered sugar for dusting cake

Beat the egg whites with cream of tartar until they are stiff; set aside.  Beat the egg yolks with the sugar until light. Add butter and water and continue beating for another minute or two after which you can add the flour and mix it in until fully incorporated.  Slowly start adding the milk and beat until everything is well mixed together. Add the egg whites, a third at a time and gently fold them in using a spatula, repeat until all egg whites are folded in.

Pour batter into a greased 8x8" baking dish and bake for 50 to 70 minutes at 325° or until it doesn't "jiggle" and is golden brown.  Check after 30 minutes and cover with foil if it's already golden. Sprinkle some powdered sugar after cake has cooled.  Makes 9 servings.  (267 calories each)

Like others, I can't really see the three layers in the finished product, but we'll definitely be having this recipe again. Wayne liked that it tastes very similar to flan, so it's more of a custard than a cake, but it's delicious! He thinks we should try it with a caramel sauce. I think we should try a chocolate and/or lemon variation.
