Anniversary Chicken
One of Jeff's roommates liked to make Anniversary Chicken on a regular basis, and since we'd never had it, one day he fixed it for us. It was pretty good!
Basically you top chicken breasts with barbecue sauce, Ranch dressing, grated cheese and bacon bits, then bake it at 350° for 30-40 minutes until it's done. Garnish with sliced green onions and/or parsley if desired. (You can find a recipe here if you want ratios or amounts, although it uses teriyaki sauce instead of barbecue sauce.) Jeff likes serving it with rice, so that's what we did. (I imagine a potato side dish would be delicious as well.) Yummy!
