Cuban-Style Potato Salads
Papas Ali-Oli (or Potatoes in Garlic Mayonnaise) - Boil 2 pounds Red Bliss potatoes in their jackets until tender. Drain, peel, slice. Toss with 1 cup mayonnaise, 2 tablespoons olive oil and 1 tablespoon minced garlic. Salt and pepper to taste. Garnish with chopped parsley.
Ensaladilla Rusa (or Russian Salad) - Combine 4 potatoes (boiled, peeled and diced) with 1/4 cup diced cooked carrots, 1/4 cup green peas and a can (6 1/2 ounces) of tuna. In another bowl combine 2 tablespoons olive oil, 2 tablespoons rice vinegar, 1 clove garlic (crushed) and salt and pepper to taste. Combine both mixtures and gently fold in 3/4 cup mayonnaise. Refrigerate. Then bring to room temperature before serving. Garnish with pimento or roasted red pepper strips.
