Edamame


I noticed a package of frozen edamame pods in the freezer, and since Fried Rice was on the menu figured it was a good night to use it up. The package directions said to bring 2 cups of water to a boil, add the edamame, boil for 3 minutes, remove from heat and let sit for 2 more minutes, then drain and serve. I guess most people just sprinkle them with sea salt, but I found this recipe that looked worth trying. It was quite good.

Sweet and Spicy Glazed Edamame

2 cups cooked edamame in their shells
1 teaspoon oil
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
2 tablespoons soy sauce
2 tablespoons water
1 tablespoons rice vinegar
1 1/2 tablespoons brown sugar
1/4 teaspoon red pepper flakes

Heat oil in frying pan and sauté garlic and ginger for a minute. Stir in the remaining ingredients (except the edamame) and cook for 5-7 minutes. Add the edamame; heat through and serve.

Note: Edamame in shells is good for an appetizer at the restaurant, because it's a good thing to nibble on while waiting for the rest of your dinner. However, we decided we prefer the shelled version at home. It's not quite as messy. Here's a recipe to try in the future - Roasted Edamame. It looks like it would make a great movie snack.
