Fabulous Desserts

About four years ago, Wayne finished making all of the recipes in our "Fabulous Desserts" cookbook, the final in a set of five* that my grandmother gave me when I was a teenager. Some of the recipes were more memorable than others, and sometimes I wish I hadn't gotten rid of the books because they're such a significant part of our family story. However, they were falling apart and we're trying not to keep obvious garbage, so now I'll just memorialize them with this post.


As you can see, the last recipe was a simple custard sauce to be served over a simple vanilla cake. And it's good that it was simple, because April 2014 was in the middle of the Fort Lauderdale Temple Open House and that took up the majority of our time that month. We made time to eat, but we didn't make time to keep a recipe blog updated!

Then once the dedication was over, it was time to start a new recipe book. Old-Fashioned Bake Sale received the honors. This is a cookbook Wayne was given by one of our sons and his family, so we think of them every time we make a recipe. We've tried many of them over the past four years (see here and here and here), but I realized we didn't write about the very first one. That deserves its own post, so here you go!


Oatmeal Toffee Cookies

1 cup butter or margarine, softened
2 eggs
2 cups brown sugar
2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats
1 3/4 cups toffee bits
1 cup coconut flakes, optional

This is a typical drop cookie. Beat the "wet" ingredients together. Combine the "dry" ingredients and add. Stir in the oats, toffee bits and coconut. Bake at 375° for about 10 minutes. Cool in pan for a bit, then move to cooling rack. Makes about 4 dozen.


* They each had intriguing titles, like Majestic Meats and Perfect Pies. I think there was one for cakes and one for cookies, in addition to Fabulous Desserts. See, it's important to record things as they happen! The infamous "Avocado Creme" and "Ham with Spiced Fruit" were some of the recipes we tried. I'll never forget "Concord Grape Pie" which was horrendous, mainly because it reminded me of my nausea after Weston's birth (which was triggered by some purple grape juice).
