Pam's Oatmeal Cookies
Holly wanted to try her friend Pam's oatmeal cookies, so we did. They're pretty good, and since they contain oats and wheat flour and flaxseed and wheat germ and dried cranberries, they must be healthy, too!
Pam's Oatmeal Cookies
1 cup butter (two sticks)
1/2 cup white sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
3 cups oats
1 1/2 cups wheat flour
2 tablespoons ground flaxseed
2 teaspoons wheat germ
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mini chocolate chips
1/2 cup chopped nuts
1/2 cup dried cranberries
Cream butter and sugars, then beat in eggs and vanilla. Combine flour, flaxseed, wheat germ, cinnamon, baking soda and salt; mix in until incorporated. Stir in chocolate, nuts and cranberries.
Scoop by spoonfuls onto cookie sheet. Bake at 350 for 10-12 minutes. Makes about 5 dozen.
Note that these don't spread during baking, so if you want round balls that's fine. We prefer flatter cookies, so I gently pressed them down before placing in the oven.
