Using a New Appliance
While reorganizing cupboards this week at my parents' house, we came across a Cuisinart ice cream maker. I doubt it was ever used before, but you can't say that now. After making a couple of batches in just a few days, it's earned its spot in the cupboard. It's up to Dad to help it continue to deserve its place.
I looked up the instructions and found some recipes here. First we tried vanilla ice cream (Dad's request), and then we tried chocolate (Holly's request). And then we tried vanilla again! Yummy, yummy - at least for the taste buds if not for the waist.
Vanilla Ice Cream
1 cup whole milk
3/4 cup sugar
1 tablespoon vanilla
pinch of salt
2 cups heavy cream
Whisk together the milk and sugar until the sugar is dissolved. Stir in remaining ingredients. Cover and chill for at least 2 hours. Place frozen ice cream maker bowl in the machine, pour in the ice cream mixture, add the paddle*, put on the lid and turn on the machine. It will be ready in 15 to 20 minutes. If too soft, pour into another container and freeze for a couple of hours.
*The paddle wasn't with the appliance when we found it, but after mixing for 20 minutes and still having a liquid mixture, my sister did some investigating and found the paddle. It really does make a difference!

1/3 cup brown sugar
3/4 cup cocoa powder
pinch of salt
1 cup whole milk
2 cups heavy cream
1 teaspoon vanilla, optional
Combine sugars, cocoa powder and salt. Stir in milk and whisk until sugar is dissolved. Stir in the cream and vanilla. Chill for at least 2 hours. Follow appliance instructions to freeze. (See above.)
