Weeknight Stromboli


While maybe not super quick and easy, this wasn't too difficult and didn't take too long to make. It would have been just fine for a Friday dinner, but we changed our minds and had it tonight.

Stromboli

for the crust:
1 cup warm water
1 tablespoon yeast
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1/2 teaspoon minced garlic
2 tablespoons olive oil
1 cup wheat flour
1 1/2 cups white flour

for the filling, approximate amounts:
2 cups shredded Mozzarella cheese
1/3 cup sliced pepperoni
1/2 pound cooked sausage
1/2 cup diced onion
1 cup sliced mushrooms
1/4 cup sliced black olives
1/2 cup pizza sauce

Prepare the crust as normal; knead and let rise for 30-60 minutes. Roll out into a rectangle and top with cheese and pepperoni. Combine remaining ingredients and spread on top. Roll up, pinch ends closed, and place on baking sheet. Bake at 400 degrees for about 20 minutes. Slice to serve, and top with additional pizza sauce and/or cheese if desired.
