Wayne's Dinner Wishes

As mentioned when I started posting these recipes a few months ago, one day Wayne came across an article with a list of holiday worthy roasts that he wanted to try. We’ve tried several of them, and the ones we’ve tried have been absolutely delicious. It may take us a while to complete the list, so I thought I’d go ahead and post this, then I’ll just add our links as we successfully complete them. How long do you think that will take???

Here’s the list. The original was in a rather random order, so I changed it.

Rosemary Garlic Rib Roast - The post for these three rib roasts can be found here. I combined them into one which was the perfect choice for Christmas Dinner 2020.

Best Beef Tenderloin – A perfect choice for Christmas Eve dinner!

Beef Wellington – Another perfect choice for Christmas Eve dinner! 

Roast Beef - I didn't follow the suggested recipe exactly, but that's okay. We've decided we really like eye of round roast (at least cooked this way), and it makes wonderful leftovers for Dutch oven sandwiches.

Crock Pot Roast Beef - This recipe calls for a bone-in pot roast. I never could find one, so used what I already had - eye of round; it was a bit dry. Maybe someday I'll try it again if I ever find a bone-in chuck roast.

Instant Pot Pot Roast - Nothing super special, but still a delicious Sunday dinner.

Corned Beef Brisket – We tried roasted (instead of boiled) corned beef for St. Patrick’s Day and really liked it.

Perfect Roast Lamb - For many years our tradition has been to have a leg of lamb roast for Easter. This recipe calls for a lamb shoulder. Should I save it for the next Easter, or should we have lamb more than once this year? Stay tuned to find out!!

Roast Leg of Lamb – Easter dinner 2020 was a success!

Rack of Lamb – This is a cut of meat I’d never purchased before, and I discovered it’s amazingly easy to prepare and makes a very impressive presentation.

Pork Loin Roast – Here’s our version, and the leftovers made a great sandwich for lunch the next day.

Cider-Glazed Pork – This is the first one we tried. It was delicious!


Roast Pork Loin with Apples and Onions - Here's another interesting fall dish. As one reviewer stated, if you add some potatoes to the pan, you have a one-dish, simple, company-worth meal. Coat the pork roast with a rub of garlic, thyme and fennel, and roast with apples and onions.

Crock Pot Pork Roast – We loved the Honey Balsamic Glaze that was pasted on this pork roast. It made quite a bit and we had leftovers of pork and glaze over rice, and also used the glaze on sauteed chicken breasts.

Stuffed Pork Loin - In order to stuff this, I learned how to butterfly a roast. Maybe I'll do it again someday!

Instant Pot Pork Tenderloin - A fancy dinner that only takes a few minutes? We'll keep this in our arsenal.

Best-Ever Glazed Spiral Ham - We found another delicious sauce to use on ham.

Maple Glazed Ham Steak - Surprisingly, kale and white beans and cornbread go quite well with ham.

Bacon-Wrapped Turkey - That link may not work, but we finally made it ourselves and this link should work. This is an absolutely delicious way to cook a turkey. Maybe next time we'll remember to serve it with cornbread stuffing.

Roast Turkey - Supposedly this is a "best ever" roast turkey recipe. Maybe, maybe not, but we did try it and we did enjoy it.

Ranch-Seasoned Roast Turkey – Although we don’t usually have Thanksgiving dinner at home, I still like to cook a turkey in November, so we did. 

Herb and Butter Roasted Turkey - Thanks to the pandemic, we actually did cook Thanksgiving dinner at home in 2020. Didn't it turn out beautifully? Definitely worthy of the honor to be served on a special day.

Citrus and Herb Butter Roasted Turkey - A lot of work for not much difference in taste, but it was a fun summer-time dinner.

Apple Cider Brined Turkey - Using a chicken instead of a turkey made it a bit more manageable, size-wise. This took a bit of work, but the results were a very flavorful poultry dinner, with plenty of delicious leftovers.

Skillet Roast Chicken – The chicken I got at Costco didn’t fit in our cast-iron skillet, so I used a regular roasting pan instead. It still turned out well.

Cider-Roasted Chicken with Walnut Goat Cheese and Red Grapes - Our version didn't look quite as pretty as the original, but it was definitely moist and flavorful. I need to use goat cheese more often!


Tuscan Butter Roast Chicken - This made a great Mother's Day dinner for us this year.

Best Chicken Pot Roast - And this recipe, cooked in the Instant Pot, was a nice autumn Sunday dinner.

Classic Roast Chicken – I can’t see much difference between this recipe and the one above, maybe it’s the lemon added to the cavity. We didn’t notice much taste from that lemon when we tried this though, maybe we should have squeezed some of the juice out first, but it was still very moist and delicious.

Roast Duck - This was a fun holiday recipe, and would be a great one to try for a small dinner party. Basically, fill the duck cavity with lemon slices and garlic, and roast in the oven, flipping it over a couple of times and basting it with a balsamic/lemon/honey mixture for the last hour or so. We found our duck at Aldi's, where it came with a packet of orange sauce; we saved that for a later meal.
