Grilled Pineapple Shrimp

Have I mentioned that Wayne likes to send me links to recipes he thinks it would be fun to try? I love having his help with menu ideas. Here’s one that was perfect for a summertime barbecue – Grilled Pineapple Shrimp. We’re looking forward to trying some more of the recipes in that list!


Grilled Pineapple Shrimp

Servings: 4

  • 3 tablespoons sweet chili sauce
  • 3 tablespoons olive oil
  • 2 teaspoons sesame oil
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried red pepper flakes
  • 1 pound large shrimp
  • 2 cups pineapple chunks
  • sesame seeds, toasted
  • green onions, sliced

Combine the sweet chili sauce, oils, garlic, ginger and pepper flakes and set aside for the glaze.

Thread shrimp and pineapple alternately on skewers. Brush with glaze.

Grill for a few minutes on each side.

Garnish with sesame seeds and green onions and serve.
