Dutch Oven Chicken with Special Dressing

I have never heard of oatmeal stuffing; have you? For the record, it's not all that great, but it can grow on you. We know that because this large pot made twelve servings, and there's just two of us. Fortunately, it does freeze well, so we didn't have to have this six days in a row!

First make the stuffing, which is combining oats, cornmeal, eggs, sauteed onions and celery, with salt, pepper, and sage. Mound that in the center of a large Dutch oven, surround with chicken thighs, and cover with water. Then bake it for a couple of hours, until the water is absorbed.
