Grilled Portobello Mushrooms

Time to try a new ingredient!

I purchased some portobello mushrooms without having a plan for how to serve them, although this Portobello Pot Roast was in the back of my mind. I don't want any leftovers from this first experiment, so we're going with this recipe, scaled down for two (note that the amounts below are for four servings). Grilled Portobello Mushrooms

  • 1 tablespoon olive oil
  • 1 tablespoon butter, melted
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • salt and pepper to taste
  • 4 portobello mushrooms

Combine everything but the mushrooms, then marinate the mushrooms in the mixture for about 15 minutes. Remove and grill for about 5 minutes on each side.

This is a delicious marinade, and we decided it would make a great sauce for other foods as well. Note also, that although I served this as a vegetarian main course, my "meat and potatoes" husband would have preferred it to be served as an appetizer.
