Cheesy Chicken Broccoli Bake

 

Although you might keep them in your pantry, this recipe calls for a couple of things we normally don't  - Ritz crackers and condensed Cheddar Cheese soup. It took a while to remember to buy them, and then to find a good day to make the dish, but that finally happened. It's definitely comfort food! However, it tasted a bit too "processed" to me, so we'll probably not have it again. Chicken Divan is similar and I know we love that.

If  you do want to make this Cheesy Chicken Broccoli Bake, combine one cup of milk, one cup of grated Cheddar cheese, 1 can of Cheddar cheese soup, a 10-ounce bag of broccoli florets, and 1/2 cup Ritz cracker crumbs. Spoon over 4 chicken breasts (that have been seasoned with salt and pepper) and top with more cracker crumbs. Bake at 350 degrees for 45 minutes.

It makes quite a bit of sauce, we served it over quinoa the first night, over mashed potatoes the second night, and then added some clams to the remaining sauce to serve over rice the last time.
