Recipes from the 80's

This week I finally started the "revamp the recipe binder" project. I rediscovered several recipe cards from when we were first married. Our tastes (and budget!) have changed over the decades, so I doubt we'll make these again. However, they're part of our family history, and I don't want to forget them, so here they are. Besides, who knows, maybe one day I will make one or two again! 

Tuna and Rice Pie - Create a "crust" out of cooked rice and top it with a tuna-egg-cheese filling, then bake.


Tuna Spaghetti Pie - Vary things by using spaghetti instead of rice! Create a "crust" by adding eggs, cheese and butter to cooked spaghetti. Top with a filling of tuna, spinach, and more cheese and seasonings. Then bake and serve.


Another Spaghetti Pie - Keep the spaghetti crust, but use ground beef instead of tuna in the filling. Think lasagna, only using spaghetti and just layering the ingredients once. (You can tell by the stains that this was a well-loved recipe. Maybe I'll have to make it again so I have a picture of the finished dish.)


Ham 'n Cheese Supper Bread - Mix ham and cheese into your biscuit dough, and eliminate the step of actually making sandwiches.



Hot Egg-Cheese Buns - Combine hard-cooked eggs with cheese and some seasonings, place in hamburger buns, wrap in foil and bake until cheese melts. 



Spam-Filled Corn Puffs - Make some cream puffs, with cornmeal in the batter. Then fill and top with a white sauce combined with cubed Spam (or ham) and corn.



Pizzeria Rice - In those early years, we often had Hot Dog Creole, and this is an Italian-inspired version of that.


Sweet and Sour Franks - Here's another hot dog recipe, this one with an Oriental flavor.


Yorkshire Chicken - This one reminded me of the Roast Beef and Yorkshire Pudding that my grandmother would make for Sunday dinners, but chicken made it more affordable for a student budget. 



Spanish-Style Chicken and Broccoli - Here's another chicken recipe, one from my sister's recipe collection.
