Bean Casserole

Looking for a side dish for our spare ribs that wasn't french fries or mashed potatoes, I came across this recipe for a pinto bean casserole, and decided it would be perfect. Basically, just combine cooked pinto beans, a can of corn and a can of tomatoes with some taco seasoning.

It worked for that meal, but we decided we'd rather have regular baked beans with our spare ribs and save our pinto beans for chili, so I added some tomato sauce to the leftovers and the next day we enjoyed our delicious lunch.
