Even More Bake Sale Recipes

Wayne's kept busy over the past few months trying new recipes. Here are the latest from the Old-Fashioned Bake Sale Cookbook.

Dino-Mite Cookies - When we first received this cookbook and flipped through the pages, we saw that we'd need some dinosaur-shaped cookie cutters, so started looking for them. We didn't have much success, however Michelle used the 3-D printer at BYU and sent the perfect gift to her dad. Finally the time came to actually use them. This is a chocolate sugar cookie dough, decorated with mini M&M's. It was a fun creative project!

Ultimate Rocky Road Cups - Make a basic brownie batter, adding some M&M's and chopped peanuts, and bake them in cupcake liners. Five minutes before done, remove from oven and top with more M&M's, peanuts, and mini marshmallows. Delicious, but we're glad we had some helpers when it came time to eat them!

Blueberry Orange Muffins - Muffins that don't crumble or stick to the paper? We'll be having these again someday!
  • 1 3/4 cups flour
  • 1/3 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3/4 cup milk
  • 1 egg, slightly beaten
  • 1/4 cup butter, melted and slightly cooled
  • 3 tablespoons orange juice concentrate, thawed
  • 1 teaspoon vanilla
  • 3/4 cup blueberries, fresh or frozen
Combine the dry ingredients. Combine the liquid ingredients. Mix together just until moistened, then gently fold in the blueberries. Spoon into greased or papered muffin cups and bake at 400 degrees for 20 minutes. Let cool for 5 minutes, then serve warm.

Take Along Cake - I imagine this name comes from the fact that this dessert is easily transported to a potluck or picnic, and can be eaten with your fingers if you want. Basically, mix a chocolate cake (the cookbook called for a Swiss chocolate cake mix; we used a German chocolate one) and stir some chocolate chips and mini marshmallows into the batter. Pour into a greased 9x13" pan and drizzle with melted butter, then sprinkle with brown sugar and chopped nuts, and bake. While it may not look beautiful, it was still very moist and delicious!

Blueberry Crumble Pie - I learned a new trick from this recipe, and it seemed to work well. Brush some beaten egg yolk over the graham cracker crust, then bake it for a few minutes before filling it with a can of blueberry pie filling. Top with a mixture of oats, sugar and melted butter, then bake it another 30 minutes. This was a bit on the too sweet side, but we didn't let that stop us from enjoying pie for dessert.
