Irish Brown Bread

For our St. Patrick's Day celebration this year, we decided to try this recipe from the Irish "heritage" section on FamilySearch

Irish Brown Bread

  • 2 cups white flour
  • 1 cup wheat flour
  • 3/4 cup wheat bran
  • 1/4 cup oat bran
  • 2 tablespoons sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 tablespoons canola oil
  • 1 egg, beaten
Combine dry ingredients, then gently stir in remaining items. Pour batter into a well-greased iron skillet and bake for 30 minutes at 400 degrees. Lower heat to 350 degrees and bake another 15 minutes. Leave bread in the oven, but turn the oven off. After 15 minutes, remove and cool on a rack.

I expected it to be a dough, but it turned out to be a batter, like cornbread. In fact, it even tasted like cornbread, at least according to Wayne. It was quite crumbly, but tasted good, especially with butter and jam!
