German Apple Cake

We could have tried a Dutch or Swedish version, but since we had spent time this week exploring the small towns our German ancestors lived in after immigrating to America, when looking for a dessert using apples and oats, this Apfelkuchen stood out and we gave it a try, putting our own spin on it. (You'll note that the original recipe doesn't call for any oats!) 

Apfelkuchen

  • 1/4 cup white flour
  • 1/4 cup wheat flour
  • 1/4 cup oat flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter or margarine
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup sour cream
  • 2 apples, peeled and thinly sliced 
  • Cinnamon-sugar
  • Vanilla glaze, optional

Combine the flours, baking powder, salt and cinnamon and set aside. Cream the butter and sugar; add the egg and vanilla and beat well. Blend in half the dry ingredients, then the sour cream, then the remaining flour mixture. Spread in a greased 9x9" baking pan. Top with sliced apples, then sprinkle with cinnamon-sugar. Bake at 350 degrees for 25-30 minutes. Serve warm, topped with vanilla glaze if desired.
