Pumpkin Chocolate Chip Cookies

I found a recipe for Pumpkin Chocolate Chip Cookies and was going to try it, but realized that it's very similar to our Favorite Chocolate Chip Cookie recipe, which has evolved over the years. So rather than trying their recipe, I'll try my own. Basically, substitute pumpkin puree for one of the eggs and add some pumpkin pie spice. That's pretty simple, isn't it?


Pumpkin Chocolate Chip Cookies

  • ½ cup margarine or butter
  • ½ cup shortening
  • ½ cup sugar
  • ¾ cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup pumpkin puree
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1-2 cups chocolate chips
  • 1 cup chopped nuts, optional
Cream butter, shortening and sugars. Add vanilla, egg and pumpkin and beat well. Combine dry ingredients and mix in, then stir in chocolate chips and nuts. Drop by spoonfuls and cookie sheet and bake at 350 degrees for 8-10 minutes.
