Mom's Caramels
Last year Michelle mentioned she wanted to learn how to make caramels like her grandmother. We ran out of time to do so during our quick visit, but I did get the recipe. Maybe we'll have time to make them this holiday season! (We did!!)
Mom's Caramels
- 1 cup butter
- 2 1/4 cups brown sugar
- 1 can sweetened condensed milk
- 1 cup white corn syrup
- pinch salt
- 1 1/2 teaspoon vanilla
Heat all ingredients except the vanilla to 234-240° (takes about 15-20 minutes) and then boil for 2 minutes. Remove from heat, stir in vanilla, and spread in buttered pan. Once set, cut into pieces and wrap in cellophane squares. Makes 96 pieces.
You can use a regular 9x13" pan, or a fancy one like this:
If you use the silicone brownie pan, they don't need to be buttered. And two of them are perfect for this batch size. (Each hole holds about 1 tablespoon.)
