Roast Venison

Marinade

  • 4 cups water
  • 1 tablespoon onion salt
  • 1 tablespoon garlic salt
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 1 teaspoon parsley flakes
  • 1/8 teaspoon Tabasco sauce
  • 8 bay leaves
Combine all ingredients in a deep container. Marinate venison or beef steaks or roasts for at least 6 hours, overnight would be better.

Heat bacon grease or vegetable oil in the Dutch oven and brown the roast on each side. Add 1/2 cup of the marinade and place pot in 300 degree oven. Roast for about 1 1/2 hours (depending on size), checking occasionally and adding more liquid if necessary.

Slice and serve with pan drippings.
