7X Beef

Several years ago I got an Ohama Steak assortment for Wayne for Father's Day, and we thoroughly enjoyed eating the various selections. However, we also decided that the cost vs. taste analysis tipped toward Costco, and have gone that route when we want to cook steak at home.

Wayne's had 7X Beef before - the owner of the company he worked for also owned that ranch and served steak at company functions - but was never willing to pay the price himself. That's why a gift card from some of our children was such a fabulous Christmas gift! We've had a great time with our special dinners at home this year.

Valentine's Day - Chuck Roast - This special holiday was the perfect occasion to start enjoying our Christmas treat. This was a a rather plebian cut of beef, but the best pot roast we've ever had.

Here's the recipe we used:

Combine 1 tablespoon ground bay leaves, 1 tablespoon ground pepper, 1 tablespoon thyme leaves, 2 teaspoons paprika, 1/2 teaspoon cumin, and 4 cloves garlic, minced. Rub the churck roast with olive oil, then the spice mixture; let set for ten minutes. Brown all over in vegetable oil, then roast at 375 degrees for one hour, or 130 degree internal temperature. Let rest for ten minutes, then serve.

Father's Day -  We shared Sierra Steak #1. This is similar to a flank steak, so I marinated it for a bit, then seared it on our grill pan.

Sunday dinner before my birthday - Sierra Steak #2 - using the same marinade recipe.

Fourth of July - We barbecued two of the 1/2 pound burgers, intending to split one and save the second for later, but changed our mind after they were cooked. And we need to get bigger buns before we cook the last two patties. (We did - on Labor Day.)

We still get to try the steaks - Delmonico and Baseball Sirloin. Sounds like a great suggestion for a birthday dinner!

I wasn't home for Wayne's actual birthday, but we did have the Delmonico for Sunday dinner once I returned. And since we split the one-pound steak, we had a repeat a few weeks later, splitting the second one. Sauteed mushrooms were a delicious addition.

Since we did a fair amount of traveling in October and November, we thought we'd save the last steaks for a New Year's Day celebration. However, we were invited to friends for dinner that day (where we actually had delicious black-eyed peas!) and so we had our last special dinner a week later. I seared the baseball sirloin for a couple of minutes on each side using our cast iron grill pan, then stuck the pan in the oven at 400 degrees for about 8 minutes. They were delicious!

We certainly enjoyed making our gift last an entire year, and thoroughly appreciated each delicious meal. For the record, though, the steaks we buy at Costco are just about as good and tender, and are quite a bit less expensive. As we've decided before, we'll stick with the tried and true in the future - unless some other opportunity presents itself!
