Healthy Blueberry Muffins

Time to try another blueberry muffin recipe! Wayne thought they weren't sweet enough, but I don't agree. What do you think? (Here's the inspiration recipe from Cookie & Kate.)

 Healthy Blueberry Muffins

  • 1 ¾ cups whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ⅓ cup melted coconut oil
  • ½ cup honey
  • 2 eggs
  • 1 cup plain Greek yogurt, sour cream or soured milk
  • 2 teaspoons vanilla extract
  • 1 cup blueberries, fresh or frozen, tossed with 1 teaspoon flour
  • 1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top
Combine dry ingredients (first four). Combine wet ingredients (next five). Mix together, then stir in blueberries. Spoon into a greased muffin pan. Sprinkle with turbinado sugar. Bake at 400 degrees for 18 minutes. Makes 12.
