Buttermilk Cinnamon Bread
There was still some buttermilk to use, and this looked like a great recipe to try.
Buttermilk Cinnamon Bread
- 4 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup oil
- 2 cups buttermilk
- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 tablespoon cinnamon
- 1-2 tablespoons finely chopped nuts, optional
Combine flour, baking soda and salt and set aside. Mix oil, buttermilk, eggs and sugar. Stir in flour mixture. Put half the mixture in greased loaf pans (2 8x4" or 5-6 mini loaf pans). Combine the 1/2 cup sugar, brown sugar and cinnamon and sprinkle half over the batter. Repeat. Using a knife or chopstick, swirl the cinnamon mixture through the batter. Top with nuts if desired, and bake at 350 degrees for 30 minutes (mini loaves) to 55 minutes (larger loaves).
