Shrimp Kabobs Moorish Style

It's a good thing we like shrimp! And it's a good thing we liked this recipe, since it makes a lot, and it has a couple of variations. If you try this yourself, don't forget to allow some time for the shrimp to marinate, and prepare to get messy when it comes time to put them on the skewers.

Camarones Maruno - Combine olive oil and lemon juice with wine (we used white cooking wine from the grocery store, but you could substitute white grape juice) and spices (cumin, parsley, bay leaves, red pepper flakes, paprika and garlic) in a blender, then pour over the shrimp. Cover and chill for several hours.

Thread the shrimp on skewers, place on a rack, and broil for three minutes. Baste with the pan drippings and serve immediately.

According to the cookbook, this makes 4 servings. In reality it makes closer to 8, and that's only if you're really hungry!
