Sweet Potato Fries

Technically, I guess these aren't fries, because they're baked, but I liked them. (Note that Wayne prefers his sweet potatoes baked and mashed.) And just in case I want to fix them again, here's how I did it.

(We served these fries with a couple of delicious venison burgers. Those were simple ground venison patties sauteed in bacon grease and seasoned with Everglades Seasoning.)

Sweet Potato Sticks

Peel a few sweet potatoes and cut into sticks. Place in a bowl of cold water for 20-30 minutes (while preheating the oven). Drain and pat dry with a towel. Put potatoes in a large ziploc bag, drizzle with olive oil and sprinkle in some seasonings. This time we used garlic powder, paprika, salt and pepper, but use whatever you'd like. Place on a rack on a cookie sheet and bake at 400 degrees for 25-30 minutes. Serve warm.
