Polenta

 

We made a delicious shrimp dish the other day, and there were some leftovers. We love Shrimp and Grits, and thought polenta would go very well with them, and would be a great way to use some of the maseca in our pantry. Here's the inspiration recipe.

Polenta

  • 1 cup maseca, or masa harina, or cornmeal
  • 1/2 teaspoon salt
  • 3 cups water or chicken broth
Combine and cook for 10-15 minutes until thick. Pour into a loaf pan and chill several hours. Slice and cook in bacon fat or vegetable oil.
