Peanut Butter and Jelly Cookies

You would think there would be some jelly in these cookies, but you would be wrong! Here's the next recipe from the Old-Fashioned Bake Sale Cook Book - basically a peanut butter cookie formed with a well to fill with jam. Make sure you have some milk handy when you devour these.


Interestingly, the recipe calls for combining the ingredients in a food processer, and not a regular bowl with beaters, so we did. I imagine, however, that the "old-fashioned way" would also work.


Peanut Butter and Jelly Cookies
  • 1 cup butter-flavored Crisco
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 2/3 cup brown sugar
  • 1/3 cup white sugar
  • 2 eggs
  • 2 cups flour
  • 1 cup strawberry preserves
Combine the shortening and peanut butter. Stir in the vanilla and sugars and beat until creamy. Add the eggs and mix well. Stir in the flour. Form into small balls, make a well (our fingers didn't really work well, but the handle of a utensil did), fill with a bit of preserves. Bake at 350 degrees for 8-10 minutes. Cool on the pan for a couple of minutes, then remove to a cooling rack. Makes 60. (Or 90, if really only using 1/2 tablespoon dough per cookie.)
