Brazilian Cheese Bites
Since purchasing some tapioca flour many years ago, we've had these delicious little cheese bites a few times, and while so far I've been able to find the link to the recipe, it's here now just in case the other website disappears. These are a wonderful addition to a soup or salad meal, particularly if you're serving someone with a gluten allergy.
Brazilian Cheese Bites
- 1 large egg
- 1/2 cup milk
- 1/4 cup canola oil
- 1 cup tapioca flour
- 1/2 tsp kosher salt
- 1/4 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- Optional: herbs or seasonings (try rosemary or garlic)
Combine all ingredients except the cheeses in the blender and mix until smooth. Add the cheese and pulse for a second or two. Pour batter into lightly greased mini muffin tins. Bake at 400 degrees for 15-20 minutes. Serve immediately.
