Colorful Brownies

Aren't these colorful brownies? And they're pretty delicious, too. I imagine you could customize these for various holidays if you so desired. And rather than type everything in, I just copied and pasted from here, which means you get all caps for many of the words.

Coconutty M&M Brownies

  • 6 SQUARES ( 1 OUNCE EACH ) SEMI sweet chocolate
  • 1/4 CUP GRANUATED sugar
  • 1/2 CUP ( 1 STICK ) butter
  • 2 LARGE eggs
  • 1 TABLESPOON vegetable oil
  • 1 TEASPOON vanilla extract
  • 1 1/4 CUPS all-purpose flour
  • 3 TABLESPOONS unsweetened cocoa powder
  • 1 TEASPOON baking powder
  • 1/2 TEASPOON salt
  • 1 1/2 CUPS M & M'S chocolate BAKING BITS, DIVIDED
  • for coconut topping -
  • 1/2 CUP ( 1 STICK ) butter
  • 1/3 CUP FIRMLY PACKED light brown sugar
  • 1/3 CUP light corn syrup
  • 1 CUP SWEETENED shredded coconut... toasted for 6-7 minutes in 350 degree oven
  • 3/4 CUPS CHOPPED pecans
  • 1 TEASPOON vanilla extract

PREHEAT OVEN TO 350 DEGREES F. LIGHTLY GREASE 8X8X2 INCH BAKING PAN;SET ASIDE.

IN A SMALL SAUCEPAN COMBINE CHOCOLATE PIECES, SUGAR AND BUTTER OVER LOW HEAT; STIR CONSTANTLY UNTIL CHOCOLATE IS MELTED.

REMOVE FROM HEAT; LET COOL SLIGHTLY.

IN A LARGE BOWL BEAT EGGS, OIL AND VANILLA; STIR IN CHOCOLATE MIXTURE UNTIL WELL BLENDED.

IN A MEDIUM BOWL COMBINE FLOUR, COCOA POWDER, BAKING POWDER AND SALT; ADD TO CHCOCLATE MIXTURE.

STIR IN 1 CUP OF THE M&M'S BAKING BITS.

SPREAD BATTER EVENLY IN PREPARED PAN.

BAKE 30 MINUTES OR UNTIL TOOTHPICK INSERTED INTO CENTER COMES OUT CLEAN.

COOL COMPLETELYO N WIRE RACK IN PAN, PREPARE COCONUT TOPPING (by melting the butter with the brown sugar and corn syrup; bring to a boil, then stir in the toasted coconut, pecans vanilla). SPREAD OVER COOLED BROWNIES; SPRINKLE WITH REMAINING 1/2 CUP M& M'S BAKING BITS. CUT INTO BARS.

STORE IN TIGHTLY COVERED CONTAINER.
