Red Velvet Cookies
I felt in the mood to take Red Velvet Cookies to our church potluck, but the Red Velvet Crinkle Cookies we've had in the past need chilling time, and I wanted something that would be quick and easy. This recipe fit the bill. I didn't bring any home, so they must have turned out alright.
Red Velvet Cookies
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup butter or margarine, softened
- 1 large egg
- 1 1/2 tbsp. buttermilk or sour cream
- 1 tablespoon red liquid food coloring, or 1/2 teaspoon gel
- 1 teaspoon vanilla
- 1 3/4 cups flour
- 3 tablespoons cocoa powder
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 to 1 cup chocolate chips
Cream together the sugars and butter; beat in the egg, buttermilk, food coloring and vanilla. Combine the dry ingredients and mix in, along with the chocolate chips. Place by spoonfuls on a cookie sheet. Press down gently with a glass dipped in sugar, then bake at 350 degrees for 10 minutes.
