Honey-Pecan Kiwi Salad

Here's this year's selection for our Easter dinner salad, chosen from the search options because our grandson loves kiwi. (He didn't care for the salad, but he did like the kiwi plain. Fortunately, all the adults thought it was a delicious and refreshing choice.)

Boston Bibb and Kiwi Salad with Honey-Yogurt Dressing

  • 5 cups torn Boston Bibb lettuce
  • 3-4 kiwi, peeled and sliced
  • 2 tablespoons vanilla yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1/2 cup blueberries or sliced strawberries, optional
  • 1/4 cup toasted pecans, chopped
Combine the lettuce and kiwi in a salad bowl. Combine the yogurt, lemon juice, honey and oil and mix until smooth for the dressing. Toss with the lettuce and kiwi and serve immediately, garnishing with berries and pecans if desired.
