Rainbow Cupcakes


Red's Rockin' Rainbow Cupcakes

1/2 cup butter
1 2/3 cup sugar
2 teaspoons vanilla
2 1/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
3 egg whites
1 1/2 cups mini M&M's, divided
1 container (16 ounces) white frosting
assorted food colorings

Cream the butter and sugar. Add vanilla. Combine flour, baking powder and salt and mix into the batter with the milk. Then beat in the egg whites. Divide the batter between 24 cupcake liners. Place 2 drops of food coloring over each and swirl gently with a toothpick. Sprinkle 3/4 cup of the M&M's over the batter. Bake for 20 minutes at 350 degrees.

Cool completely on a wire rack. Tint the frosting blue, then frost the cupcakes, using the remaining M&M's to decorate with rainbows.

While I personally thought adding M&M's to the cupcakes themselves was a bit unnecessary, this is actually a pretty good cupcake recipe. We may just try it again in the future!


David was in town to help Weston hang some doors and a fan. The boys had fun, not only playing with each other, but also helping us by eating lots of cupcakes!
