Strawberry Crumble Bars

What is it about summer barbecues that make me want to find a strawberry dessert? Anyway, here's the one I found for this year's Memorial Day celebration. I was hoping for a finger food; we'll see how crumbly it is, if these really need to be eaten with a fork! Oops, that wasn't the one I ultimately decided on, but I'm sure it would be delicious. Here's the proper one.


Strawberry Crumble Bars

  • 1 cup regular oats
  • 3/4 cup wheat flour (or white)
  • 1/3 cup brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 6 tablespoons butter, melted
  • 2 cups diced strawberries
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon white sugar, divided
Combine the oats, flour, brown sugar, ginger and salt. Mix in the melted butter until crumbly. Press half into a parchment paper lined 8x8" baking pan. Scatter half the strawberries on top. Sprinkle on the cornstarch, lemon juice, and half the white sugar. Top with the remaining strawberries and sugar. Finally, sprinkle with the other half of the oat mixture. Bake at 375 degrees for 35-40 minutes. Cool completely before cutting into bars. If desired, drizzle with a simple vanilla glaze before serving.
Note: Can be doubled and baked in a 9x13" pan.
