Chicken Salad

We're trying to use up the jar of roasted red peppers, so I added them to some chicken salad for our picnic sandwiches. However, the leftover salad on a bed of spinach looked so pretty, I decided it deserved its own post. 

I just opened a can of chicken from our pantry and stirred in some mayonnaise. This version had celery, roasted red peppers, black olives and feta cheese as well. Wayne thinks adding grapes or raisins would work (but maybe not with the olives and cheese), so someday we'll try that variation. What do you like in your chicken salad?
