Creamy Tomato Coleslaw

Even our extended family isn't a fan of coleslaw, but it goes so well with pulled pork, that they serve it occasionally. Here's the version Julie served at Mom's 90th birthday party, and it's actually quite delicious. I may just make it again someday!

Creamy Tomato Coleslaw (adapted from the Lion House Cookbook)

• 1 head cabbage, shredded or chopped
• 1 carrot, grated
• 1/2 red pepper, chopped
• 2 green onions, sliced
• 1 tomato, chopped
• 1 cup mayonnaise
• 1/4 cup sugar
• 3 tablespoons vinegar
• 1 teaspoon celery seed
• 1 teaspoon salt
• 1/2 teaspoon pepper

Combine all ingredients. Chill before serving.

She also served Instant Pot Macaroni and Cheese, Sweet Cilantro Rice, assorted chips and watermelon. We had a great birthday celebration!
