Soft Apple Cookies
It's always fun to try new recipes, and the internet is a glorious thing in helping to find them. This week's search was "pioneer cookies" (because they were a treat for our choir singing "Faith in Every Footstep") with apples or pumpkins for a fall feel (because it's autumn). Here's my variation from this inspiration recipe.
Soft Apple Cookies
- 1/2 cup butter or margarine
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla
- 2 eggs
- 1 cup white flour
- 1 cup wheat flour
- 1/2 tablespoon cinnamon
- 1/4 teaspoon allspice (will leave out next time)
- 1/4 teaspoon salt
- 1 1/2 cups grated (or finely chopped) peeled and cored apple
Cream butter and brown sugar, then beat in vanilla and eggs. Combine dry ingredients and stir in until combined. Mix in apples. Drop by spoonfuls on cookie sheet. Bake at 350 degrees for 10-12 minutes. Makes about 36 cookies.
