Honey Lime Yogurt Sauce

Combine about 1/2 cup plain yogurt with a bit of honey and lime juice. Stir in some sliced green onion and let set for a while. Serve over jerk chicken and coconut rice.

Jerk Chicken

Just sprinkle some chicken breasts with jerk seasoning and grill or sauté. Or, if you'd like, spread some yogurt over the chicken before the seasoning and let marinate for 30 minutes or so first.

Coconut Rice

Just use coconut milk for the water (or half milk, half water) to cook the rice. This time, though, I used the "rice pilaf" method and cooked the dry rice in a bit of coconut oil first. Then, since I was out of coconut milk, I used almond milk. Delicious!
