Theo the Baker

Since we adapted our Famous Chewy Oatmeal Cookies to make them both kid-friendly AND gluten-free, I figure they deserve their own post. Here's the recipe Theo made "all by himself" to serve his mom and aunt.

Oatmeal Chocolate Chip Cookies

  • 1/2 cup shortening
  • 1/4 cup margarine
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1/4 cup almond milk (or water)
  • 1 teaspoon vanilla
  • 3 cups oat "flour" (pulverized oats)
  • 1 cup gluten-free flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup chocolate chips

Cream shortening, sugars, egg, milk, and vanilla. Add dry ingredients and mix well. Fold in chocolate chips. Drop by spoonfuls on cookie sheet. Bake at 350° for 10-12 minutes. Makes about 4 dozen cookies.
