More Kale Salads
We've decided we actually like kale, and prefer it in salads instead of cooked as a side vegetable. Since it is December, here's a nice holiday salad. (I did make a couple of adjustments.)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups chopped kale
- 1 cup sliced cabbage
- 1/2 cup sliced mushrooms
- 1/2 cup blueberries
- 1/4 cup pomegranate arils
- 1/4 cup sliced green onion
- 1/4 cup sliced almonds, toasted
- 1/4 cup feta cheese, crumbled
Combine dressing ingredients in a large salad bowl (olive oil to pepper). Then add the other ingredients, except for the cheese and toss. Sprinkle with feta cheese before serving. Makes 4 servings.
For a quick, simple salad, combine kale with chopped tomatoes, then top with Ranch dressing and bacon bits. Delicious!
Or mix the kale with some avocado, add a simple lemon vinaigrette and top with Parmesan cheese.
