Good Rice
This is certainly in interesting title for something that is basically a rice pilaf. However, it was good!
Since the recipe suggested making the chicken stock from scratch, we picked up a rotisserie chicken at the grocery store, ate part of it for lunch on errand day, cut off a couple of servings for today, and put the rest of it in a pot this morning to make that stock.
Good Rice
- 1/2 cup butter
- 1 large onion, diced
- 2 cups white rice
- 4 cups chicken stock
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh basil, chopped
- 1/2 teaspoon salt
Melt the butter and sauté the onions until soft. Stir in the rice and cook until golden. Add the stock, parsley, basil and salt. Cover and steam for 18-20 minutes until the rice is cooked. Serves 6-8 (or even more).
