Chocolate Granola
Here's another recipe from Mel, and it's another great one. I made half a batch, but it will last for quite a while in our household. We'll see how long!
Chocolate Granola
- 1 1/2 cups rolled oats
- 1/2 cup chopped almonds
- 1/3 cup shredded coconut
- 1/4 cup dark cocoa powder
- 3 tablespoons brown sugar
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla
- 1/3 cup mini chocolate chips
- 1/2 cup freeze-dried strawberries
Combine oats, almonds, coconut, cocoa powder, brown sugar and salt in a large bowl. Combine oil, maple syrup and vanilla in a small bowl. Then mix the two and spread on a lined cookie sheet. Bake at 250 degrees for about an hour, stirring once or twice. Sprinkle with chocolate chips. When thoroughly cooled, stir in strawberries.
