Gluten-Free Bread
I made some Herb Dinner Rolls to serve with our beef stew for dinner, but then learned at the last minute that one of our guests is allergic to gluten, so I decided to try something new. My adaptation of this recipe turned out well. It reminded me a bit of Brazilian Pan de Queso.
Gluten-Free Bread
- 1 2/3 cups gluten-free flour
- 1 1/2 teaspoons rapid rise/instant yeast
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup warm water
- 3 tablespoons honey
- 3 tablespoons apple cider vinegar
- 2 egg whites, room temperature
Combine dry ingredients; combine liquid ingredients. Mix together, then pour (will be like a thick cake batter) into a greased 8x4" loaf pan. Let rise for 30 minutes. Bake at 350 degrees for 30 minutes. Cool in pan for ten minutes, then remove and cool thoroughly before slicing.
