Nutritional Yeast
A while ago I purchased some nutritional yeast - for this dairy-free recipe - and since we prefer normal sour cream instead of a dairy-free version, we need to come up with some other uses for this jar in the pantry. Here are some ideas from Bob's Red Mill and Open Fit.
- on popcorn*
- on pasta
- on vegetables
- on salads
- added to biscuit dough
- added to baked potatoes
- in scrambled eggs
- in soups
- in sauces
- in "shake and bake" coatings
Basically, it looks like it can be used as a garnish in place of Parmesan cheese. I'll have to remember that. Since we use a fair amount of Parmesan cheese in our regular diet, it shouldn't take too long to finish this jar.
Actually, it's been several years since I started this post, and we did NOT use up the jar of nutritional yeast. It has gone rancid, so off to the garbage it goes. Sorry about that! However, maybe I'll still try these two ideas, but with some Parmesan cheese instead.
According to some unknown person, kale chips are arguably one of the tastiest ways to enjoy this dark leafy green. I guess I should see if I agree. Rub a clean, dry bunch of kale leaves with about a tablespoon of oil, then sprinkle with nutritional yeast and salt to taste (plus any other seasonings you like). Bake at 225 degrees Fahrenheit on a baking sheet for 15 to 25 minutes, until crispy (flip them halfway through).
*Here's a suggested recipe: "Cheesy" Popcorn - Combine 4 cups popped popcorn (about 1/4 cup un-popped) with 1/4 olive oil, 1/4 cup nutritional yeast, 3 tablespoons chopped fresh chives and 1 teaspoon sea salt.
