Dill!
The dill was in stock this week, so we picked some up, and are looking forward to using it. First was adding some dill, along with feta cheese, to simple scrambled eggs.
Scrambled Eggs with Feta and Dill - Cook 4 eggs, 1 tablespoon chopped dill, 1/4 cup feta cheese, salt and pepper to taste. Garnish with additional dill if desired.
Dill Butter #1 - Combine 2 tablespoons butter, 1 tablespoon chopped dill, 1/2 teaspoon lemon zest, cayenne, salt and pepper to taste. Spread on toast (or a toasted English muffin), top with a slice of smoked salmon, a poached egg and a few asparagus spears. Serve immediately.
Smoked Salmon Spread - The dill isn't quite so fresh anymore, but it still worked in this great spread, which helped us use up our current "Aisle 1" purchase of crackers. (This was easily scaled down for two by dividing in fourths.)
- 8 ounces cream cheese, softened
- 6 ounces smoked salmon
- 1/4 cup cream
- 1/4 cup capers
- 2 tablespoons green onion, sliced
- 1 1/2 teaspoons chopped fresh dill
- 3 dashes Worcestshire sauce
- 3 drops Tabasco sauce
- 1 squeeze lemon juice
Mix all ingredients together.
