Dill!


The dill was in stock this week, so we picked some up, and are looking forward to using it. First was adding some dill, along with feta cheese, to simple scrambled eggs.


Scrambled Eggs with Feta and Dill - Cook 4 eggs, 1 tablespoon chopped dill, 1/4 cup feta cheese, salt and pepper to taste. Garnish with additional dill if desired.

Dill Butter #1 - Combine 2 tablespoons butter, 1 tablespoon chopped dill, 1/2 teaspoon lemon zest, cayenne, salt and pepper to taste. Spread on toast (or a toasted English muffin), top with a slice of smoked salmon, a poached egg and a few asparagus spears. Serve immediately.


Dill Butter #2 - The above recipe was made with softened butter; this was exactly the same, but I melted the butter first. Oh, and I added a tablespoon of lemon juice. (Here was the inspiration recipe.) Then toss it with some roasted potatoes. Delicious, and went super well with our salmon dinner.
