Sorullitos

I couldn't remember the name of this recipe that I wanted to try, so told Wayne we were having cheesy corn fritters. That's basically what they are! And he said of all the ways I've tried to use up our can of maseca, this is the most palatable. Maybe we'll have them again!

Sorullitos de MaĆ­z (small batch for two)

  • 1 cup water
  • 1/2 tablespoon butter
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2/3 cup corn flour (maseca, masa de harina, or even cornmeal)
  • 1/2 cup shredded cheddar cheese
Bring water, butter, sugar and salt to a boil; whisk in the corn flour. Stir until it forms a ball, then remove from heat. Add the cheese and mix until melted and combined. Let sit until cool enough to handle, then form rounded tablespoonfuls of dough into small logs. Fry in hot oil until golden brown and crispy on the outside. Serve warm, with salsa or honey if desired.
