Sage!
The next herb in line was sage. It's normal to use this in chicken or turkey dishes, and I might have saved it for our Thanksgiving turkey if we had been cooking that at home. But we traveled for the holiday, so I used it in a Creamy Sage Chicken dish instead. It was quite delicious!
To make this recipe, dice and/or chop mushrooms, shallots and fresh sage. Sauté in a bit of olive oil, then set aside. Sauté some chicken breasts, topped with a whole sage leaf or two and salt and pepper to taste. When cooked through, stir in the vegies and some heavy cream. Heat through then serve over rice. Nice and simple, yet company worthy.
